Regardless of your choice of meal experiences, chances are you’ll encounter someone who highly recommends the signature Floridian Strawberry Soup. Come to think of it… I suppose I just passed on that recommendation myself. Much like the Dole Whip or a startlingly large, mutated turkey leg – this is just one of those must-haves for resort guests. Unfortunately, too many guests simply don’t get around to “resort hopping”, and those who aren’t staying at The Grand Floridian may never know the joy that is the Strawberry Soup!!
Egads!! Say it ain’t so!!!
Alrighty, I suppose I can offer a little help with this crisis. Actually… you’d be surprised how easily this delectable treat can be duplicated in your very own kitchen – with very few ingredients, and a very small investment of time. In the mood to indulge? Well, I can’t provide you with the key to duplicating a Grand Floridian Spa experience at home, but… here’s my recipe for Floridian Strawberry Soup!
First, let’s gather our ingredients:
1/3 c. sour cream
1/3 c. granulated sugar
1 1/2 c. heavy whipping cream
2 c. strawberries
Now, a little commentary on the ingredients. I’ll admit that I am not often the healthiest of cooks/bakers. In most of my recipes, I don’t make an effort to look for the lighter, low-fat, etc. versions of ingredients. Obviously, if you are more health-conscious, it is certainly your choice to substitute ingredients for healthier versions. My copycat recipes have been tinkered with quite a bit as well. When I want to duplicate an item I’ve had somewhere, I look up numerous different recipes that claim to be copycats of widely recognized menu items. I take bits of some recipes, pieces of others, and them tweak them out a touch to make them my own. I highly encourage anyone else to do the same. With this recipe, all examples I found called for frozen strawberries, and none seemed to include added sugar. Based on my tastes, I made a few changes to the examples that were already out there.
Step 1: Clean and slice a full carton of fresh strawberries. Lay them out, and cover with a healthy dose of sugar. I used about half of a 1/3 cup of sugar – reserving the remainder for later. Set aside the platter of strawberries for 20 minutes, allowing them to soak up the sugar.
Step 2: As strawberries are finishing their “soak”, combine the heavy whipping cream, sour cream, and remaining sugar in a blender. Blend on low until well-combined and smooth.
Step 3: Add strawberries, a cup’s worth at a time. I found it to be easier to gently push the strawberries down into the cream mixture a bit before blending on a medium setting. Once well incorporated, mix in another cup of berries and blend again. You’ll probably have just over 2 cups of strawberries. Reserve a couple halves for garnish!
Step 4: Once you have a nice light pink color throughout, and your blended mixture is smooth, you’re done! It should be nearly the same consistency as a yogurt.
Finished result – divvied up into two large bowls, garnished with remaining strawberry halves. Chill what you can’t finish… the leftovers make a nifty, light breakfast!
