WYOMING – GRAND TETONS GASTRONOMY – SIGNAL MOUNTAIN LODGE’S PEAKS RESTAURANT SHOWCASES REGIONA


GRAND TETON NATIONAL PARK, WYOMING (March 2018) – The Peaks Restaurant at Signal Mountain Lodge—the only lodging on the shores of Jackson Lake in Grand Teton National Park—offers regionally inspired dishes that enhance visitors’ experience of the world-famous park. Prepared to showcase locally sourced meats, sustainable fish and produce, these dishes bring a taste of the Grand Tetons to life.

Erik Kimball, Food & Beverage Director for Signal Mountain Lodge, sources beef from Wyoming Ranches such as Lockhart Cattle Company and bread from Persephone Bakery, both located in Jackson Hole, Wyoming. Cheese comes from regional suppliers including Manwaring Cheese in Rigby, Idaho, while he procures seasonal produce from Robinson Family Farm & Ranch in Star Valley, Wyoming.

“People journey to Grand Teton because of the majestic scenery and to make memories that will last for years to come,” says Kimball. “Our menu is designed to make the experience even more enjoyable by featuring tempting local ingredients grown and raised this beautiful landscape.”

Dishes include:

  1. Colorado White Bass – Crispy-skin fillets, lemon chermoula, Idaho potato and kale hash

  2. Farmer’s Market Salad – Local greens, shaved golden beets, blistered cherry tomatoes, candied pecans, Grana Padano dressed with citrus vinaigrette

  3. Seared Idaho Trout – Seasoned trout, mashed potatoes, fresh greens with citrus vinaigrette

  4. The Surrounding Peaks Burger – Lockhart Cattle Company ground beef (Jackson, Wyoming), Persephone Bakery bun (Jackson, Wyoming), Manwaring Elkhorn Cheese (Rigby, Idaho), house-made mayonnaise, fingerling potato salad, house-made pickles, house-made steak sauce

  5. Ballard Farms Pork Chop – Grilled bone-in pork chop, chipotle apple jam, sweet potato and Brussels sprout hash

  6. 12-ounce Wyoming Ribeye – House rub, house-made steak sauce, mashed potatoes, farm share vegetable medley
